Pesto Tortellini And Serano Ham
A fresh summer pasta salad. The pesto and Serano ham go perfectly together. The mozzarella and tomatoes provide a fresh touch to the salad.
You can make this salad in advance and keep it in the fridge until you serve it.
I used tortellini’s with cheese and nut filling, this combination gives a sweet touch to the dish.
What do you need?
- 500 gr (17 oz) torellini (cheese filling)
- 150 gr (5 oz) pesto
- 150 gr (5oz) mozzarella balls, halved
- 200 gr (7 oz) cherry tomatoes, halved
- 1 red onion, chopped
- 200 gr (7 oz) Serano ham, cut in pieces
How to make it?
Cook the tortellini as described on the package. After draining, pour a little olive oil on the tortellini and stir well together. This way you prevent them from sticking together. Let cool for 30 minutes.
Spoon the pesto under the tortellini. Then add the mozzarella balls, cherry tomatoes and red onion. Stir well into the tortellini.
You can add the serano ham and stir under the pasta salad. But serano ham has a tendency to stick together. I always divide the serano ham over the whole when the pasta is divided between plates.
