Mediterranean Couscous Salad

A wonderfully fresh couscous salad, with feta, fresh mint and delicious Italian herbs. A really fresh summer dish. Can be served as a side dish, with a delicious BBQ or simply as a main course.

What do you need?

  • 150 gr (5,5 oz) couscous
  • 1 cucumber, cut into small cubes
  • 150 gr (5,5 oz) cherry tomatoes, cut into quarters
  • 70 gr (2,5 oz) olives (I used black ones)
  • 1 green pepper, finely chopped
  • 120 gr (4 oz) Feta (crumbled)
  • Handful of mint leaves, finely chopped

Dressing

  • Juice of 1 lemon
  • 1 tablespoon of white wine vinegar
  • 2 tablespoons of olive oil
  • 2 cloves of garlic, pressed
  • 2 teaspoons of sugar
  • 1 tablespoon of Italian herbs
  • ½ teaspoon of salt
  • 1 teaspoon of pepper

How to make it?

Cook the couscous as described on the package. Let cool for half an hour before adding the vegetables and dressing.

Meanwhile make the dressing. Add all ingredients into a small bowl and stir well.

Take a large bowl, add the couscous and loosen it by stirring with a fork.

Add the vegetables, olives, feta and mint and mix into the couscous.

Finally add the dressing, stir again so the dressing is well spread.
