chicken with cashews
I personally enjoy roasted cashew nuts with Asian dishes. The sauce that comes with this dish has a slightly sweet touch but not too dominant so that you still taste the cashew nuts.
What do you need?
- 2 chicken fillets, cut into strips
- 60 gr (2 oz) corn starch
- 120 gr (4 oz) cashew nuts
- 3 cloves of garlic, minced
- 2 spring onions, chopped
- 3 tablespoons of hoisin sauce
- 2 tablespoons of soy sauce, low sodium
- 2 tablespoons of rice vinegar
- 1 teaspoon of sesame oil
How to make it?
Roast your cashew nuts in advance. Put the nuts in a bowl and add 1 tablespoon of olive oil. Stir well so all nuts are covered with oil.
Divide the nuts on a baking tray that you lined with baking paper. Make sure the nuts are in a single layer.
Roast them in the oven at 390°F or 200 °C (30°F or 180 °C hot air) for 15 minutes.
Roll the chicken strips through the corn starch and fry them in a large frying pan with olive oil.
In a small bowl, combine the sauce ingredients, hoisin sauce, soy sauce, rice vinegar, sesame oil and minced garlic. Stir well and add this to the fried chicken. Bake for 1 more minute.
Add the cashews and spring onions.
Serve with jasmine rice.
