Apple-Walnut Muffin
This is THE muffin of muffins, if I say so myself. They were are always a big hit when I make them.
A Nice and soft apple muffin with a crispy crumble on top, which taste a bit like a cinnamon cookie. Delicious!
I guarantee you, people will fight over them when you put them on the table, so make sure you make enough ?
What do you need?
- 250 gr (8,8 oz) flour
- 200 gr (7 oz) granulated sugar
- 1 teaspoon of salt
- 115 gr (4 oz) unsalted butter (cut into small cubes cold)
- 2 teaspoons of baking powder
- 0.5 teaspoon of baking soda
- 190 ml (6,7 oz) apple sauce
- 1 egg
- 1 teaspoon of vanilla extract
- 2 apples cut into cubes (used a sweet kind of apple)
For the crumble topping:
- 60 gr (2,11 oz) walnuts (finely chopped)
- 55gr (2 oz) of brown sugar
- 1 teaspoon of cinnamon powder
- 30 gr (1 oz) unsalted butter, melted
How to make it?
Preheat the oven to 180 °C 350°F (hot air 160 °C or 320°F ). Prepare a muffin tray for 12 muffins, put in paper liners. Spray these paper liners with baking spray. This ensures that your muffins are more easily released from the paper.
In a small bowl, put the finely chopped walnuts, brown sugar and cinnamon powder. Put this aside for a moment.
In a large bowl, put the flour, sugar and salt. Add the cold cubes of butter and make sure they form a beautiful whole. You can do this by using a pastry blender for it or you can use your hands to mix the dough. Do not do this too long because the heat from your hands will melt the butter too quickly.
When this is done, scoop out one cup from this dough (use a regular coffee cup) and add it to the crumble. Mix until it all combines.
In another small bowl you now add the apple sauce, vanilla extract and the egg and mix it together. then add this mix to your flour mix and also take back ¾ of a cup from your crumble mixture and add this to your flour mix. Now mix all of this, until it’s all combined. Now you can add the apple pieces and gently scoop under the dough.
Add the melted butter to the crumble and put it together with your hands until it crumbles.
Divide the dough between the 12 muffin cups, I use an ice cream scoop for this. Divide the crumble over all 12 muffins.
Put in the oven and bake for 25 minutes. Let the muffins cool off in the muffin tray for 10 minutes before taking them out and let them cool on a cooling rack.
