Pin Wheels With Jam

A super simple tasty puff pastry cookie that goes perfectly with a nice cup of coffee.

Puff pastry is something I always have in my freezer. This way I can always quickly make something for an unexpected visitors.

What do you need?

  • 10 slices of square puff pastry (from the freezer)
  • 10 teaspoons of jam of your choice (I used cherries)
  • 50 gr (2 oz) sugar
  • Optional: Almond shavings to finish.

How to make it?

Preheat your oven to 200 °C 390 °F (180 °C or 350 °F hot air). Cover a baking tray with baking paper.

Place the slices of puff pastry on the baking paper, make sure you remove the papers between the puff pastry. Let thaw for 10 minutes.

Put a teaspoonful of jam in the center of each slice of puff pastry. Make a cut from every corner to towards the middle, stop before you touch the jam (so not all the way to the middle, the cuts should not touch each other)

Fold into a windmill (see photo).

Brush the dough with water, I used a baking brush for this. Sprinkle some sugar over the dough, this way it gets a sweet taste.

If you like, you can sprinkle some almond shavings over the center.

Place the puff pastry pin wheels in the oven and bake for 15-20 minutes, until they’re nicely browned.

Put them on a cooling rack to cool off.
