Hasselback Potato Deluxe
A delicious potato baked in the oven. Here at home we are not real potato lovers. That’s why I make more pasta and rice dishes than potatoes. But this potato was very successful and certainly worth repeating.
You can also make the Hasselback potato without cheese, sour cream and pancetta. Just bake the potato in the oven in the same way. But I found this deluxe version very festive. It Also has a very nice presentation if you want to serve a potato in a prettier way.
What do you need?
- 8 large potatoes
- 4 slices of cheese
- 125 gr (4,4 oz) Sour cream
- 100 gr (3,5) pancetta
- Pepper and salt
- Optional: fresh parsley
How to make it?
Preheat the oven to 200°C or 390°F (180°C or 360°F hot air). Cover an oven tray with baking paper.
Wash the potatoes and make thin cuts in the potatoes. But don’t cut them all the way through.
Place on the baking tray and pour a little olive oil over each potato, as well as pepper and salt.
Bake in the oven for 30 minutes.
In the meantime, you can cut the pancetta into small pieces and bake it crispy. Keep these aside for later.
Cut the cheese into pieces, the size of the potatoes.
Remove the potatoes from the oven and insert a slice of cheese in between a few slices of each potato.
Return to the oven for 10 minutes.
Serve the potatoes with a spoonful of sour cream and pieces of pancetta. Finish with a little fresh parsley.
