Deviled Eggs With Pancetta

A super simple dish, but one that should not be missed on a brunch or breakfast table, I personally think.  This is the basic version of the deviled egg, I only added pieces of fried pancetta. I prefer pancetta instead of bacon because I personally like this better. But you can also cut up regular bacon and bake it.

What do you need?

  • 6 eggs, hard boiled and peeled
  • 3 tablespoons of mayonnaise
  • 1 teaspoon of mustard
  • Pinch of salt
  • ½ teaspoon paprika powder
  • 50 gr (2 oz) pancetta, cut into small pieces and crispy

How to make it?

Cut the eggs in half and take out the yolks, put them in a deep plate and put the empty egg whites on a flat plate.

Crush the egg yolks and at the mayonnaise and mustard, stir well. Season with paprika powder and salt.

Fill a piping bag, with a ribbed and wide nozzle, with the egg yolk mixture.

Fill the egg whites with the egg yolk mixture. Decorate with fried pancetta pieces.

TIP: Boil the eggs a day in advance, when they are completely cooled, they peel more easily and you do not break them as easily by cutting them. Keep in the fridge until ready to make.
