Farmer’s Casserole

A delicious winter casserole with real power food. This is certainly a dish that will be greatly appreciated by many men. Potatoes, bacon and eggs, and also delicious Brussels sprouts although my husband said this makes it a less manly man dish, LOL.

I’ve always liked Brussels sprouts, I think I was one of the few kids that didn’t iiieeewww when Brussels sprouts came on the table. My daughter’s first reaction was the reaction of a child, iew mommy these are Brussels sprouts.

I said no, that’s broccoli, taste it, you love broccoli. She takes a big bite, mmmm good she says. Ah you see that Brussels sprouts are tasty, HIHIHI,…. Got yah.

No really, I think this combination is really great and the Brussels sprouts finish it off. But if you’re not crazy about Brussels sprouts, you can also replace them with cauliflower or broccoli. Also two delicious winter vegetables.

What do you need?

  • 1 kg (35 oz) of potatoes
  • 400 gr (14 oz) bacon cubes
  • 500 gr (17 oz) Brussels sprouts
  • •4 eggs
  • 1 onion, cut finely
  • 1 teaspoon of garlic powder
  • Salt and pepper to taste

How to make it?

Peel the potatoes and cut them into cubes, about the same size. Fry the potatoes in oil in a frying pan (about 30 minutes). Stir frequently.

In the meantime, you can clean and cook the Brussels sprouts. After cooking, cut the Brussels sprouts in half.

Fry the bacon cubes nicely brown in a frying pan. Then add the onion, let it fry for a while with the bacon cubes and then add the Brussels sprouts. Bake everything nicely brown.

Add the bacon and Brussels sprouts to the potatoes when they are cooked and fry briefly together so that the flavors blend. Season with salt, pepper and garlic powder.

Fry 4 eggs in a frying pan and serve on top of the potatoes.
