Kids Pasta
This dish is something my mother-in-law often made in the summer. She calls it kids pasta because she usually put little cocktail sausages in it like those little swan sausages and this is typically something kids really love.
I made my own version of the kids pasta, I choose frankfurters because they have a nice smoked taste. I also make the sauce with yogurt instead of just mayonnaise, I think this gives it a fresher taste.
What do you need?
- 300 gr (10 oz) tri color paste
- 12 frankfurters
- 1 cucumber
- 20 cherry tomatoes
- 300 gr (10 oz) corn (large can)
- 300 gr (10 oz) carrots and peas can
For the Sauce
- 125 gr (4,5 oz) yoghurt
- 40 gr (1,4 oz) mayonnaise
- 1 tablespoon of ketchup
- Salt and pepper
How to make it?
In a large cooking pot, cook the pasta as described on the package. After draining, rinse with cold water so the pasta cools down faster.
Cut the cucumber into small cubes and the tomatoes into 4 pieces.
Take a large bowl and add the cucumber cubes and tomatoes as well as the corn, carrots and peas.
Fry the frankfurters nicely brown and cut them into pieces. Add these to the vegetables.
Make the sauce by adding all the ingredients in a small bowl and season with salt and pepper.
Spoon the pasta and sauce into the vegetables and serve.
