Popcorn Chicken Bites

When you organize another tapas evening, these fun and delicious chicken bites should certainly be left out.  Or you can just serve them for dinner with some delicious fries.

The two dipping sauces taste completely different, one is a sweat chili sauce, the other a sweet honey mustard sauce. But they go perfectly with the chicken bites, they complement each other.

What do you need?

  • 400 gr (14 oz) chicken fillet
  • 150 gr (5 oz) Greek style yoghurt
  • 2 teaspoons of mustard
  • ½ teaspoon paprika powder
  • Salt and fresh black pepper to taste
  • 100 gr (3,5 oz) panko breadcrumbs
  • Olive oil for greasing

Sweet chili dip

  • 40 gr (1,4 oz) Sweet chili sauce
  • 2 tablespoon of ketchup
  • 2 teaspoons of lime juice

Honey mustard dip

  • 70 gr (2,5 oz) Greek style yoghurt
  • 2 teaspoons of mustard
  • 1 tablespoon of honey
  • ½ tablespoon of olive oil
  • ½ teaspoon paprika powder
  • Salt to taste

How to make it?

Preheat the oven to 220 °C or 430 °F (hot air to 200 °C or 390 °F). Prepare an oven tray with baking paper.

In a bowl you mix the Greek style yogurt with the mustard, paprika, salt and black pepper. Cut the chicken fillet into bite size cubes.

Add the chicken cubes to the yogurt mixture and stir them through the mixture.  Make sure all cubes are well covered.

In smaller bowl add the panko breadcrumbs and put the chickens one by one through the breadcrumbs.

Place the chicken bites on the oven plate, make sure they are not too close to each other.

Before you put them in to oven, rub them with olive oil. Bake for 15-20 minutes.

While the chicken bites are in the oven you can make the dip sauces.

Take two bowls and add the ingredients for each sauce to a bowl and stir well.

Remove the chicken bites from the oven and serve with the dip sauces.
