Spicy Shrimp Burrito

This burrito is a half warm dish, but It’s also delicious when it’s completely be cooled down, if you like to prepare everything in advance. Another nice thing about these kinds of dishes is that you can put everything on the table and let everyone make their own burrito.

What do you need?

  • 6 tortilla wraps
  • 400 gr (14 oz) shrimp (peeled)
  • 1 green pepper (diced)
  • 100 gr (3,5 oz) black beans
  • 100 gr (3,5 oz) white rice (cooked)
  • 1 avocado (cut into strips)
  • 1 tomato (finely chopped)
  • 1 onion (finely chopped)
  • 2 cloves of garlic (minced)
  • A few lettuce leaves
  • ½ teaspoon of cumin
  • ½ teaspoon paprika powder
  • Pepper and salt
  • For the sauce
  • 80 gr (3 oz) mayonnaise
  • 1 tablespoons Sriracha (hot chili sauce)
  • ½ teaspoon of lime juice

How to make it?

In a large frying pan, fry the bell pepper, along with the onion and garlic. Season with cumin, paprika, pepper and salt.

Put the bell pepper aside in your pan and briefly fry the shrimp. Then stir them under the bell pepper.

Briefly heat your tortilla wrap as indicated on the package.

Place 2 tablespoons of rice and a teaspoon of black beans in the center of the wrap. On top of this you scoop two teaspoons of the bell pepper mixture and put 3 shrimp on top.

Then you put a teaspoon of the finely chopped tomatoes on top. Then a leaf of lettuce and finally two more slices of avocado. Now you put sauce on top of everything.

Fold closed, start by folding the sides inwards first and then roll up.

You can eat it close (eats a little easier), but if you want to present it nicely, you can cut it In half.
