Coffee Cake Donuts

This is a delicious variation on the oven baked donuts. But the topping makes these donuts taste completely different again. A deliciously sweet topping that’s nice and crunchy.

What do you need?

For the topping

  • 60 gr (2,12 oz) unsalted butter (room temperature)
  • 50 gr (1,7 oz) light brown caster sugar
  • 120 gr (4,23 oz) flour
  • ½ teaspoon of cinnamon

Glaze

  • 80 gr (2,8 oz) powdered sugar
  • ½ teaspoon of vanilla extract
  • Pinches of salt
  • 1 or 2 tablespoons of milk

How to make it?

Preheat the oven to 180 °C or 360 °F (160 °C or 320 °F hot air). Spray a donut tray with baking spray.

Make the donut dough as described in the recipe.

Make the topping by combining all the ingredients and knead with your hands into a crumbly mass.

Divide the donut dough over the donut tray. Crumble the topping over the donuts.

Place in the oven and bake for 20 minutes.

Remove from donut tray and let cool on a wire rack.

Make the glaze by combining the ingredients in a bowl. Start with 1 tablespoon of milk and add more if it is not running enough.

When the donuts are cooled down, you can drip the icing over the donuts with a spoon.

TIP: the topping is more than you can divide on the donuts. But due to rising, the topping will no longer cover the donut completely. After 10 minutes of baking, the donuts have risen and you can still put the other topping over the donuts and continue baking. That way you get nicely covered donuts.
