Cauliflower Zucchini Soup
A deliciously creamy soup with a super full flavor. This soup is very filling, so if you serve it with bread you suddenly have a delicious meal.
What do you need?
- 1 medium cauliflower, cut into florets
- 1 large zucchini, cut into cubes
- 1 onion, finely chopped
- 3 cloves of garlic, finely chopped
- 1L (35 oz) chicken stock
- Pepper and salt to taste
- Sour cream (optional)
How to make it?
Take a large cooking pot and fry the onion and garlic in a little oil.
Add the cauliflower and zucchini and cook for 5 minutes. Stir frequently.
Pour the chicken stock into the vegetables and cook for 20 minutes.
When the cauliflower is cooked, mix the soup with a hand blender.
Season with salt and pepper.
Divide into soup bowls and possibly spoon a small spoonful of sour cream into the center of the soup.
