Pumpkin Soup With Mascarpone And Pesto Rosso

When you see pumpkin soup you know fall is there. I think for most people pumpkin equals the end of the year is in sight. Chilly outside, a delicious bowl of warm soup inside.

This pumpkin soup has a delicious full flavor due to the mascarpone, the pesto gives the soup extra flavor.

With this soup you can serve a delicious piece of homemade onion cheese bread or other bread you like.

What do you need?

  • 1 medium pumpkin, cut into cubes
  • 1 onion, shredded
  • 2 cloves of garlic, finely chopped
  • 1 l  (35 oz) chicken stock
  • 125 gr (4,4 oz) mascarpone
  • 2 tablespoons of pesto rosso

How to make it?

In a large cooking pot you fry the onion and garlic. When the onion is translucent, add the cubes of pumpkin and fry it for 2 minutes. Stir frequently.

Add the chicken stock and bring to a boil. Then turn the heat to a medium-high setting and cook for 30 minutes.

Add the mascarpone and pesto and mix the soup.

Season with salt if necessary.
