Savory Waffle With Smoked Salmon

We found this a wonderfully fresh lunch. I had never made savory waffles before, but this was more than successful. Really a great combination.

What do you need?

  • 300 gr (10,6 oz) cottage cheese
  • 4 eggs
  • 2 teaspoons of baking powder
  • 60 gr (2,15 oz)parmesan
  • 120 gr (4,23 oz) buckwheat flour or all-purpose flour
  • 200 gr (7 oz) smoked salmon
  • 200 gr (7 oz) sour cream
  • 2 avocados, cut
  • Fresh chives
  • baking spray

How to make it?

Mix the eggs with the cheese, stir both well together, so that it forms a nice whole.

Now add the flour as well as the baking powder and Parmesan. Stir everything well together.

Heat your waffle iron, spray baking spray on both sides of your waffle iron before baking. This will keep your waffles from sticking and cracking.

Use an ice cream scoop, scoop a scoop or two scoops, depending on the size of your waffle iron, of the batter in your waffle iron. Bake until nicely browned (about 3-5 minutes).

Let the waffles cool for 1 minute on a cool rack.

Then you can divide them over the plates. Spoon a little sour cream on the waffles, top with smoked salmon, a few slices of avocado and finish with fresh chives.
