Blinis
Blinis are a typical Russian mini pancake, they are not sweet but it’s a savory dough, they are delicious to eat with salmon and other types of fish. Usually sour cream is served with them, but you can also use cream cheese or crème fraîche if you prefer.
It is no more difficult to make than regular pancakes, they only have a smaller shape.
Take enough time before you start, this dough has to rest for 1h before you can start baking. This is for activating the yeast.
What do you need?
- 200 gr (7 oz) buckwheat flour
- 4 gr of instant dried yeast
- 2 eggs (split)
- 250 ml (8,8 oz) milk (lukewarm)
- 1 teaspoon of sugar
- Pinch of salt
Topping options:
- Sour cream
- Smoked salmon
- Lumpfish eggs
- Cucumber
How to make it?
Take a mixing bowl and add the buckwheat flour, yeast, sugar and salt in it.
Split the eggs. Keep the egg white aside for later.
Add the lukewarm milk to the egg yolk and beat the egg yolk through the milk.
Pour the milk into the flour and mix together. Cover the pot and let it rest for 1 hour in a warm, draft-free place.
Beat the egg white until stiff and fold it into the batter.
Heat a pan with a little butter and pipe small circles of dough in your frying pan. You can also use a spoon if you don’t have a batter dispenser. Fry on a medium high heat.
Fry them until the top is dry, then flip over, cook briefly on the other side.
Serve the blinis with the named toppings or others of your choice.
