Churro’s Muffins
I love cinnamon, so these muffins were more than a success for me. Delicious crispy topping and a delicious fluffy muffin.
What do you need?
- 280 gr (9,87 oz) all- purpose flour
- 300 gr (10,58 oz) white sugar
- 2 teaspoons of baking powder
- ½ teaspoon of salt
- 1 teaspoon of cinnamon powder
- 370 ml (13, 05 oz) of milk
- 1 egg
- 30 gr (1,06 oz) butter, melted
- 1 teaspoon of vanilla extract
For the topping
- 60 gr (2,12 oz) melted butter
- 120 gr (4,24 oz) white sugar
- 2 teaspoons of cinnamon powder
How to make it?
Preheat an oven to 180 °C or 360 °F (160 °C or 320 °F hot air). Take a muffin pan and spray the muffin cups with baking spray.
In a large bowl, combine the flour, sugar, baking powder, salt and cinnamon.
In another bowl add the milk, egg, melted butter and vanilla extract. Stir these well together.
Pour the milk mixture into the flour mixture. And stir well.
Divide the batter over the muffin cups, they can be filled almost to the top.
Bake in the oven for 20-25 minutes.
Let them cool for 10 minutes before removing them from the muffin pan. Then you transfer them to a cooling rack. Let it cool for another 10 minutes.
Meanwhile melt the butter in a small bowl. In another you put the sugar and the cinnamon powder, stir them together well.
Now pass the top of each muffin first through the butter and then through the sugar-cinnamon mixture.
You can serve them immediately or let them cool down even further.
