Chicken in pineapple sauce
A delicious pineapple sauce with super tender chicken bites. The pineapple sauce makes the chicken incredibly tender and juicy.
This dish is simply delicious. If you are not a fan of a slightly spicy taste, you can leave the chili flakes out.
What do you need?
- 2 chicken fillets, cut into cubes
- 100 gr (3,5 oz) corn starch
- 2 eggs, beaten
- 100 gr (3,5 oz) breadcrumbs (I used panko)
- 1 red pepper, cut into cubes
- 2 cans of pineapple slices on their own juice (440 g), cut into cubes
For the sauce
- 240 ml (8,5 oz) of pineapple juice
- 75 ml (2,6 oz) soy sauce (low sodium)
- 1 tablespoon of rice vinegar
- ½ tablespoon of sesame oil
- 2 tablespoons of corn starch
- ¼ teaspoon of chili flakes
How to make it?
Take 3 bowls, in the first bowl you put the corn starch. In the second the beaten eggs and in the third the breadcrumbs.
Pass each chicken cube first through the cornstarch, then through the beaten egg and then the breadcrumbs. Repeat each step until all chicken cubes are done.
Fry the chicken in a frying pan with two tablespoons of vegetable oil. Then add the bell pepper and fry it for 3 minutes.
In the meantime, you can combine the ingredients for the sauce in a bowl. Stir well to dissolve the corn starch.
Pour the sauce over the chicken and let it simmer for 3 minutes, so that it can thicken. Add the pineapple cubes and let it heat up for 1 minute.
Serve with jasmine rice if you like.
