Eggplant With Feta Cheese

The combination of feta and eggplant is heavenly. I love feta cheese so this was a real treat for me.

It is a quick and easy to prepare side dish and not to forget, a healthy dish.

What do you need?

  • 1 eggplant
  • 100 gr (3,5 oz) feta cheese
  • 3 handfuls of fresh parsley
  • Black pepper and salt

How to make it?

Cut the eggplant into slices. Heat a frying pan with olive oil and fry the eggplant nicely brown on both sides. Season them with salt and pepper.

When ready, place the eggplant slices on a plate. Finely chop the parsley and divide it over the slices.

Crumble the feta cheese and divide it over the eggplant slices as well.
