Homemade Pudding
Pudding, also called pastry cream. Many People make pudding with instant pudding powder these days, but it’s actually very easy to make.
I have made it myself many times and it has never failed even not my first time. If you try it yourself you will see how easy and simple it really is.
What do you need?
- 470 ml (16,58 oz) of milk
- 85 gr (3 oz) white sugar
- 20 gr (0,7 oz) vanilla sugar
- 50 gr (1,8 oz) flour
- 4 egg yolks
How to make it?
Take a small saucepan and bring the milk to a boil.
In the meantime, take a bowl and add the white sugar along with the vanilla sugar and the egg yolks. Wisk this well.
Add the flour and stir until the flour is completely absorbed into the egg mixture.
When the milk is warm, remove from the heat. Add a spoonful of warm milk to the egg mixture. I use a gravy spoon for this.
Stir well until the milk is absorbed. Then gradually add more milk. Stir the milk well into the egg mixture.
When all the milk is added, pour it back into the saucepan and bring to a boil. Keep stirring until the milk has thickened nicely and it is a nice even mass.
Transfer to a clean bowl, cover with plastic foil and allow to cool down. If you are going to use the pudding in pastry or another dessert, stir it before you use it.

TIP: Do not add too much milk to the egg mixture at once or you will get lumps.
TIP: Press the plastic foil on the pudding and let it cool down like this.
