Noodles With Thai Peanut Sauce

Noodles with a delicious peanut sauce and a slightly spicy taste. If you don’t like to eat spicy food or you would like to prepare it for your children, you can leave out the hot chili sauce.

What do you need?

  • 250 gr (8,8 oz) noodles
  • 2 chicken fillets, cut into cubes
  • 100 gr (3,5 oz) corn starch
  • 200 gr (7 oz) white cabbage, cut
  • 100 gr (3,5 oz) grated carrots
  • 2 spring onions, sliced
  • 4 tablespoons of roasted peanuts (unsalted)
  • 3 tablespoons of olive oil

For the sauce

  • 60 gr (2,11 oz) peanut butter
  • 60 ml (2,11 oz) soy sauce (low sodium)
  • 2 tablespoons of honey
  • 1 teaspoon of ginger powder
  • 1 tablespoon of rice vinegar
  • 1 teaspoon of sesame oil
  • 1 teaspoon Sriracha (hot chili sauce)
  • 3 cloves of garlic, minced

How to make it?

Cook the noodles as described on the package.

Take a bowl and add the corn starch. Roll the chicken cubes through the corn starch and fry them in a wok pan in oil.

Add the white cabbage and grated carrots and stir until tender, about 3 minutes.

In the meantime you can make the sauce. Combine all ingredients in a bowl and heat briefly in the microwave for 30 seconds. This way you can mix the peanut butter with the other ingredients.

Add the noodles to the wok as well as the sauce, peanuts and spring onions. Bake everything for 1 another minute.

Just before serving, add 3 tablespoons of olive oil and stir well into the noodles. This will keep the noodles from being too dry, because peanut sauce is very sticky and dries them out.
