Oatmeal cookies
Super delicious cookies. I just love these cookies.
The big advantage of these cookies you don’t have to let the dough rest in the refrigerator first. You can immediately use it to make and bake cookies.
They are also super delicious if they are not completely cooled down.
What do you need?
- 50 gr (1,7 oz) white caster sugar
- 50 gr (1,7 oz) light brown caster sugar
- 30 gr (1 oz) unsalted butter (room temperature)
- 1 egg
- 1 teaspoon of vanilla extract
- 70 gr (2,5 oz) oatmeal
- 100 gr (3,5 oz) flour
- 1 teaspoon of baking powder
- Pinch of salt
How to make it?
Preheat the oven to 200 °C or 390°F (180 °C or 360°F hot air). Cover a baking tray with baking paper.
In a large bowl, mix the two types of sugar together with the butter into a whole.
Add vanilla extract and the egg. Mix this under the sugar-butter mixture until it is completely incorporated.
Now you can add the other ingredients, oatmeal, flour, baking powder and a pinch of salt.
Mix all this together into a nice dough.
The dough is quite sticky, use two tablespoons to scoop the dough onto the baking tray. 1 tablespoon per biscuit. Try to give the cookies a round shape with the spoons. You don’t have to push them flat.
Bake the cookies for 15-20 minutes until they are nicely browned.
Let cool on a wire rack.
