Pizza with caramelized onion and goat cheese
Pizza remains one of the dishes that I not only enjoy eating but also enjoy making. I prefer to make my own dough. It does take some time, but it has so much more character. And it’s so much better.
This variant has deliciously sweet caramelized onions, the goat cheese goes perfectly with this.
What do you need?
- 250 gr (8,8 oz) homemade pizza dough (half of the recipe) or one roll of ready-made dough
- 2 onions
- 1 tablespoon of honey
- 100 gr (3,5 oz) frozen spinach (thawed)
- 150 gr (5,3 oz) goat cheese
- 20 gr (0,7 oz) Parmesan
For the pizza sauce
- 400 gr (14 oz) tomato cubes
- 1 teaspoon of balsamic vinegar
- 2 teaspoons of sugar
- 1 teaspoon of garlic powder
- 1 teaspoon of Italian herbs
- 1 teaspoon of rosemary
How to make it?
Preheat the oven to 220 °C or 430 °F (200 °C or 390 °F hot air). Take an oven tray and cover with baking paper.
Roll out the pizza dough into a round / oval shape. Place the dough on the baking dish lined with baking paper.
Take a bowl and add all the sauce ingredients, take a mixer and mix the ingredients.
Spoon a few spoons of the sauce onto the dough and spread evenly.
Cut the onion into half rings and bake them nicely brown in a frying pan, when they are almost ready add a tablespoon of honey and cook for another 2 minutes.
Divide the fried onion over the pizza as well as the spinach.
Cut the goat cheese into slices and divide it over the pizza as well.
Sprinkle the Parmesan over it and put the pizza in the oven, bake for 20 minutes.

TIP: The pizza sauce is actually for two pizzas so if you make two it’s fine, otherwise you can freeze the surplus for another time.
