Cheese Cookies
Last school year we got this recipe from Alyssa (my daughter) her teacher during the lockdown as an activity assignment. We find them super delicious.
That’s why I wanted to share them with you on the blog. I did give the recipe my own little twist ?.
You can make the round cookies as a delicious snack, or strips like I did and then serve it as a snack with drinks .
What do you need?
- 220 gr (7,76 oz) self-rising flour
- 160 gr (5,64 oz) grated cheese (well-flavored)
- 120 gr (5,23 oz) unsalted butter (room temperature)
- 4 tablespoons of cream
- 2 eggs
- ½ teaspoon of salt
- 1/8 tablespoon of pepper
- 1 teaspoon paprika powder
- 1 teaspoon of garlic powder
- 1 teaspoon of dried basil
How to make it?
Take a bowl and mix in the cheese together with the butter. Stir these under each other.
Add the cream, 1 egg and the herbs. Stir everything together well.
Finally, add the self-rising flour and mix it with your hands.
Make a ball of the dough and wrap it with tin foil. Place in the refrigerator for at least 1 hour.
Pre heat the oven to 180 °C or 360°F (160 °C or 320°C hot air). Take two oven trays and line them with baking paper.
Take the dough out of the fridge and let it come to temperature for 15 minutes so you can roll it out better.
Sprinkle a little flour on your work surface and roll out the dough to a thickness of 0.5 to 1 cm. Keep in mind that the dough in the oven will double in height.
Cut strips from the dough or cut rounds out of the dough. Make a ball again from the remaining dough and roll it out and cut out shapes again. Repeat this until the dough is all gone.
Place the cookies on the baking tray. Beat the remaining egg and brush the biscuits with it.
Let them bake for 12-15 minutes until they are nicely browned.

TIP: if you like to make thicker cookies, keep in mind that the baking time will be longer.
