Dutch Peppernuts (gingerbread nuts)
I think these peppernuts cookies are delicious. It’s Dutch cookie that’s been made around Saint Nikolas or like we call him Sinterklaas. The cookie has nothing to do with pepper, so have no fear, it’s a sweet cookie with cinnamon flavor.
It’s also a fun activity with children. They can help from start to finish. It is also not a kind of dough that needs to rest in the refrigerator, so you can immediately start rolling balls.
Within half an hour you can enjoy your self-baked peppernut cookies.

What do you need?
- 125 gr dark brown caster sugar
- 250 g self-rising flour
- 4 teaspoons gingerbread spice
- Pinch of salt
- 100 g cold butter, in cubes
- 8 tablespoons of milk
How to make it?
Preheat the oven to 170 °C or 340°C (150 °C or 300 °C hot air). Take a baking tray and cover it with baking paper.
Take a bowl and add the sugar, self-rising flour, gingerbread spices and a pinch of salt. Mix this well together.
Now add the cold butter cubes and the milk. knead everything well together with your hands. Until you can form a ball of the dough.
Roll balls the size of a large marble if you want larger gingerbread cookies or the size of a regular marble if you want small gingerbread cookies. I chose the larger version.
Place the balls on the baking tray, do not put them together, leave a little space between the balls. This way they can rise well and do not stick together after baking.
Bake them for 20 minutes, then let them cool on a wire rack.
