Asian Popcorn Chicken Bites
I love popcorn chicken bites, they are delicious as a snack and as a dish itself. These chicken bites are an Asian variant of the regular popcorn bites. I bake them in the oven instead of in a frying pan this way the chicken is more tender.
What do you need?
- 2 chicken breasts (cut into cubes)
- 100 gr (3,5 oz) breadcrumbs (I used panko)
- 2 eggs, beaten
- 1 tablespoon of rice vinegar
- 2 tablespoons of soy sauce (low-sodium)
- 1 tablespoon of hoisin sauce
- 1 teaspoon of ginger powder
- Olive oil
How to make it?
Preheat the oven to 200 °C or 390°F (180 °C or 360°F hot air). Take an oven tray and cover it with baking paper. Rub the baking paper with olive oil.
Take two deep plates. In the first you put the breadcrumb. In the second, add the beaten eggs, rice vinegar, soy sauce, hoisin sauce and ginger powder.
Dip the chicken cubes first in the egg mixture, then in the breadcrumbs. Repeat this for each chicken cube.
Place the chicken cubes on the oven tray. Rub a little olive oil on each cube.
Place the plate in the oven and bake for 10 minutes. Then turn the chicken cubes over and bake for another 10 minutes.
Serve with your favorite Asian sauce if desired.
