Chinese Stuffed Buns

These Chinese buns were completely unknown to me. They are also called the Chinese burgers. I had never eaten or even heard of them. When I made them for the first time, they were immediately a big hit. But this is usually the case with Asian food 😉

I make them for dinner, I serve edamame (soy beans) with them, and as a sauce I always use hoisin sauce, which is deliciously sweet and fits perfectly with these buns.

Chinese Stuffed Buns

What do you need?

The dough

  • 400 gr (14 oz) all-purpose flour or patent flour
  • 130 gr (4,58 oz) of boiling water
  • 120 g (4,23 oz) cold water
  • Pinch of salt

Stuffing

  • 400 gr (14 oz) mixed minced meat
  • Handful of chives, finely chopped
  • 2 cloves of garlic, minced
  • 3 spring onions, chopped
  • 1/2 teaspoon of salt
  • ½ tablespoon of ginger powder
  • 1 tablespoon of rice wine
  • ½ tablespoon of sesame oil
  • ½ tablespoon of soy sauce
  • 100 ml (3,5 oz) of water

How to make it?

Take a bowl and put the flour in it , add the boiling water. Stir this under the flour. Then add the cold water and knead the dough for 10 minutes. You can do this with your stand mixer and kneading hook.

Place the dough in a bowl and let it rest for 1h.

Now you can make the filling. Take the ground beef and add all the ingredients and the water. Mix this until the water is absorbed into the mix. Covered it up and put in the fridge until you are ready to use it.

Make balls of the dough that weigh about 30 gr. Push each ball flat with your hands and roll out, really flat.

If the dough is too sticky, use a little extra flour.

Spoon 1 to 1 and ½ tablespoon of the filling into the center of the dough. Fold the dough up to the center. Make sure the dough is completely closed. (look at the picture above)

Place the finished buns on a plate, sprinkle a little flour on the plate first so your buns don’t stick to it.

Repeat the steps until you run out of filling.

Heat a tablespoon of oil in a large frying pan and fry the buns. First place them with the closing side down.

Fry them on a medium heat and cover until nicely browned on both sides (about 5 minutes).

Serve with hoisin sauce or any other sauce you like.
