Fried rice

I have been making this dish for years and I have been making little changes and improved over the years. But it still remains one of the favorites here at home. Even our little girl often asks to make this dish.

It is quite simple to make and there is not much you can do wrong with it. You make the dish in several steps to allow the rice and other ingredients to fry nicely.

This is one of the few dishes where I use a good amount of butter and oil. But this is just a part of fried rice. ?

What do you need?

  • 250 gr (9 oz) jasmine rice, cooked
  • 3 eggs
  • 125 gr (4,4 oz) ham cubes
  • 150 gr (5,3 oz) peas (thawed)
  • 1 leek (only white from the leek), sliced ​​(small pieces)
  • 3 carrots, cut (small cubes)
  • 2 medium onions, finely chopped
  • 2 cloves of garlic, minced
  • 4 tablespoons of soy sauce
  • 1 tablespoon of rice vinegar
  • 2 tablespoons of sesame oil
  • 2 tablespoon of hoisin sauce
  • 1 tablespoon of ginger powder
  • 4 tablespoons of olive oil
  • 2 tablespoons of liquid butter

How to make it?

Heat 1 tablespoon of olive oil in a wok pan, fry the ham cubes for 5 minutes. Remove the cubes from the wok pan and set them aside.

Beat the eggs with 1 tablespoon of water. Now fry the egg in the wok pan. When it is almost completely fried, push it into pieces in your wok pan with a spatula. fry for 1 minute more and then remove them from the pan.

Heat another tablespoon of olive oil and wok the carrot cubes, leek and peas in it. When they are done,  remove them from the wok pan and also set aside.

Now heat the butter and remaining olive oil. Fry the onion and garlic in it. It is a lot of butter and oil, but this is to fry the rice and give it a delicious fried rice flavor.

When the onion are glassy, you can add the rice, sauces and ginger powder. Turn up your heat and fry the rice. (5-10 minutes) Stir frequently, but not constantly.

Then add the vegetables, egg pieces and ham cubes back to the wok pan and stir these under the rice. Bake for another 2 minutes.
