Pasta With Creamy Basil Sauce, Pine Nuts And Salmon
This is a dish that I have been making for years, our daughter calls it green pasta, but now that I made it for the blog I had to give it a different name.
It is a wonderfully creamy sauce with a delicious note of roasted pine nuts and a nice piece of baked salmon fillet.
What do you need?
- 350 gr (12 oz) spaghetti
- 3 salmon fillets
- 500 ml (17,6 oz) cream
- 100 gr (3,5 oz) pine nuts
- 1 basil plant
- 50 ml (1,7 oz) olive oil
- 3 cloves of garlic
- 100 gr (3,5 oz) Parmesan
- Pepper and salt to taste
How to make it?
Cook the spaghetti as described on the package.
Roast 75 gr or ¾ of the pine nuts in a frying pan.
Take a deep pot, add 25 gr or ¼ of the pine nuts, the leaves of the basil plant, olive oil and garlic. Mix this finely with a hand mixer.
Heat the cream and add the mixed basil and Parmesan. When it has heated up and thickened, add the pasta, stir the sauce into the pasta and season with salt and pepper.
Fry the salmon fillet.
Serve the pasta with pine nuts and a piece of salmon.

TIP: I use light cream, feel free to use full cream, this just makes the dish a lot heavier.
