Stuffed and double baked potatoes

The nice thing about this potato is its unique presentation. The filling itself is actually puree made from the inside of the potato with some really tasty spices and ingredients added.  After this the potato is been refill and bake an extra time in the oven with cheese on top.

What do you need?

  • 6 large potatoes
  • 1 small broccoli, cooked
  • 150 gr (5 oz) of grated cheese
  • 2 tablespoons of butter
  • 100 ml (3,5 oz) of milk
  • 100 gr (3,5 oz) of Greek yoghurt
  • 1 teaspoon of salt
  • ½ teaspoon of pepper
  • 1 teaspoon paprika powder
  • 1 teaspoon of onion powder
  • 1 teaspoon of garlic powder
  • 1 teaspoon of nutmeg
  • 1 tablespoon of fresh chives

How to make it?

Preheat your oven to 200 °C or 390°F (180 °C or 360°C hot air). Take out 1 oven tray and cover with baking paper and set it aside for later.

Wash your potatoes and put them unpeeled in a small oven dish. Let them bake in the oven for 1h.

Let the potatoes cool down for 15 minutes after baking before you cut them lengthwise. Carefully empty the potato with a spoon and put it in a bowl.

Mash the filling with a potato masher, add the butter, milk and cheese, as well as the herbs.

Cut the cooked broccoli into smaller pieces and stir it under the potato mash, as well as 100 gr (3,5oz) of the grated cheese.

Fill the empty potatoes with this filling and sprinkle the remaining cheese on the stuffed potatoes.

Let them bake in the oven for 20 minutes.
