Stuffed Zucchini Boats
These stuffed zucchini remind you a bit of a burrito, it has the same filling, only the presentation is different. The filling has a very nice taste. Even our daughter really liked the filling.
What do you need?
- 2 large zucchini
- 1 onion, cut
- 400 gr (14 oz) minced chicken or turkey
- 2 cloves of garlic, minced
- ½ teaspoon of cumin
- 1 teaspoon of paprika powder
- 100 gr (3,5 oz) corn
- 100 gr (3,5 oz) rice, cooked
- 100 gr (3,5 oz) bacon, fried in small pieces
- 100 gr (3,5 oz) grated cheese
- Fresh black pepper
- Salt
- Olive oil
How to make it?
Preheat the oven to 190 °C or 370°F (hot air 170 °C or 340°F ). Cover an oven plate with parchment paper.
Cut the zucchini so you get 4 half zucchini. Take out the zucchini meat. Use a spoon to scrape out the meat.
Cut the zucchini meat into pieces and set aside for later.
Place the empty zucchinis on the oven tray and brush them on the inside with olive oil and season with black pepper and salt.
Fry the bacon until crispy and cut them into pieces, set aside for later.
In a large frying pan, fry the onion together with the garlic. Add the minced meat and fry until it’s no longer pink. Season with cumin, paprika powder and salt.
In a large bowl, combine the rice, corn, bacon, zucchini meat, minced meat and half of the grated cheese. stir well.
Fill the empty zucchinis with this mixture and top with cheese.
Place in the oven and bake for 20 minutes.

TIP: If you have leftover filling, you can put this in a bowl and place it in the oven, top with a little grated cheese. Serve this with the zucchinis as an extra.
