Baby potatoes with meatballs, broccoli and cauliflower
A simple but balanced weekday dish that’s ideal for the whole family.
I like to bake my meatballs in the oven, this way they are more evenly baked, but if you prefer to bake them in a frying pan, feel free to do so.
What do you need?
- 500 gr (17 oz) baby potatoes
- Pepper
- Salt
- 1 tablespoon of rosemary
- ½ cauliflower
- ½ broccoli
Meatballs
- 500 gr (17 oz) minced meat (I used mixed mince)
- 30 gr (1 oz) breadcrumbs (I used breadcrumbs)
- 1 egg
- 1 teaspoon of onion powder
- 1 teaspoon paprika powder
- 1 teaspoon of garlic powder
- ½ teaspoon of salt
- ¼ teaspoon of pepper
How to make it?
Preheat the oven to 200 °C or 390°F (180 °C or 360°F hot air). Take an oven tray out of the oven and cover with baking paper. Rub the baking paper with a thin layer of olive oil.
Cook the broccoli and cauliflower al dente. Do not let them cook too long, they still need to be baked afterwards.
Put the minced meat in a bowl and add the egg, breadcrumbs and herbs. Mix the minced meat with your hands and roll balls the size of a golf ball.
Place the meatballs on the baking tray. Bake them in the oven for 10 minutes, then turn them over and bake for another 10 minutes.
Meanwhile, fry the potatoes in a large frying pan with olive oil. When they are nicely browned, season with rosemary, pepper and salt. Now add the cauliflower and broccoli and fry for 5 minutes.
Finally add the minced meat balls and mix them under the potatoes.
