Belgian Beef Stew with Belgian Trappist Beer (Leffe)

A delicious stew made with real Belgian Trappist beer, I also dare to use a much heavier Trappist to make beef stew. But this time I chose Leffe because it’s almost everywhere available.

I use honey to give the stew a delicious sweet taste, which goes perfectly with the beef.

I served oven-baked fries with this stew. I’m actually not that much of a fries eater (I know how can that be, a Belgian person not loving fried fries). But I love oven baked fries. I make these with fresh potatoes and not the freezer kind.

What do you need?

  • 600 gr (21 oz) beef in pieces
  • 1 onion, chopped
  • 1 slice of white bread
  • 2 tablespoons of mustard
  • 2 tablespoons of honey
  • 1 leffe
  • 1 teaspoon of thyme
  • ½ teaspoon of fresh black pepper
  • 1 teaspoon of salt
  • 2 bay leaves

How to make it?

In a medium cooking pot you fry the onion, add the cubes of beef and let it brown nicely (5 minutes), season with salt and pepper.

Then add the Leffe, thyme, bay leafs and honey.

Spread the mustard on slice of bread and place it on top of the meat, mustard side down.

Turn your fire to a low setting and let it simmer for at least 3 hours. Stir every 15 minutes.

You will see that your sauce has thickened nicely after 3 hours and your meat is falling apart. Then the stew is completely ready.
