Cauliflower Soup With Roquefort And Crispy Pancetta
Delicious creamy cauliflower soup with a soft Roquefort flavor.
I serve this soup with crispy fried pancetta pieces, but you can also make it with bacon. A nice piece of bread is also delicious with this soup.
What do you need?
- 1 cauliflower cut into florets
- 1 onion, chopped
- 50 gr Roquefort
- 800 ml chicken stock
- 200 ml of milk
- Salt and pepper to taste
- 200 gr pancetta
How to make it?
In a large cooking pot, fry the onion. Add the cauliflower florets and fry them for a while.
Pour in the chicken stock and milk and let it boil for 20 minutes.
In the meantime, cut the pancetta into pieces and fry them until they are nicely brown.
Add the Roquefort and mix the soup with a hand blender.
Season with salt and pepper.
Serve with crispy pancetta pieces.
