Mediterranean Pasta Salad
A fresh summer salad, with a delicious vinaigrette. This pasta salad goes well with as a side dish or on a pasta table. You can perfectly make it in advance and keep it in the fridge until you serve it.
What do you need?
- 2 chicken fillets, in very small cubes
- 2 avocados
- 10 oz or 300 gr of pasta
- 2 red onions
- 10 cherry tomatoes, divided in two
- 10 leaves of fresh basil, cut
- Salt and pepper to taste
Dressing
- 2,5 oz or 50 ml of white wine vinegar
- 1 tablespoon of Italian herbs
- ½ cup or 130 ml olive oil
- Salt and pepper to taste
How to make it?
Cook the pasta as described on the package.
Briefly fry the chicken cubes in a pan, fry until they are no longer pink, but not longer, then they become dry.
Make the dressing, put al the ingredients together in a bowl and set aside.
Put the cooked pasta in a large bowl, add the vegetables, chicken and basil. Stir well.
Cover with the dressing, stir again and serve.
