Orzo With Meatballs And Greek Feta Yogurt
A super delicious dish that makes you long for the summer months. I had never made orzo before this, it’s not rice but some kind of pasta. The combination with the feta yogurt was also a wonderful surprise, it is precisely this that gives it such a wonderful summery touch.
What do you need?
- 300 gr (10,58 oz) orzo pasta (riso)
- 1 clove of garlic, finely chopped
- 2 tablespoons of butter
- 150 gr (5,30 oz) green olives
Meatballs
- 500 gr (17,64 oz) minced meat
- ½ onion, finely chopped
- 1 clove of garlic, finely chopped
- 2 tablespoons of dried oregano
- 1 teaspoon of smoked paprika powder
- 3 tablespoons of breadcrumbs
Feta yogurt
- 200 gr (7 oz) feta cheese
- 60 gr (2,11 oz) Greek yogurt
- 2 tablespoons of olive oil
How to make it?
Combine the ingredients for the meatballs and knead them under the meat with your hands. Roll balls the size of a golf ball.
Fry the meatballs in a frying pan, take a large pan, you will need it later to fry the orzo.
Cook the orzo as described on the package.
When the meatballs are ready, remove them from the pan. In the same pan, now add 2 tablespoons of butter and briefly fry the garlic.
Add the orzo and fry in the pan for 10 minutes, stirring frequently.
Add the olives and meatballs to the pan and let it heat up for a while.
Make the feta yogurt by combining the ingredients and mixing them with a blender or hand blender.
Serve the feta yogurt with the orzo.
