Vanilla cupcakes

A simple basic recipe for vanilla cupcake. Nothing fancy on itself, but they are a good base to decorate cupcakes or to put a  nice butter cream on top. I’ve made this recipe so many times.

They are simply delicious cupcakes. Our daughter loves it even without decoration, preferably without anything on it, lol….

What do you need?

  • 180 g (6,35 oz) self-rising flour
  • 4 eggs
  • 8 gr (0,28 oz) vanilla sugar
  • 130 gr (4,59 oz) white sugar
  • 180 gr (6,35 oz) butter (room temperature)
  • Pinch of salt

How to make it?

Preheat your oven to 180 °C or 360°F (160 °C or 320 °C hot air). Prepare a muffin pan with paper cupcake cases in it.

Add the butter, white sugar and vanilla sugar in a mixing bowl and mix for 3-5 minutes until creamy.

Then add the eggs, do this one by one, only add the next egg when the previous one has been incorporated into the batter.

Finally, add the self-raising flour and salt, do this in 3 steps. Mix until the self-raising flour is completely incorporated.

Spoon the batter into the cupcake cases, I use an ice cream scoop for this and put 1 scoop in each mold.

Bake them in the oven for 20 minutes. Let them cool further on a cooling rack.
