Apple Cake

Cake itself is very simple to make. Apple cake is not more difficult . you can make an apple cake in many sizes and different designs.

For this apple cake I chose for one where you can still see the apples after it’s baked.

By baking the cake at a lower temperature, but a little longer, the apples will not burn and your cake will still be completely baked inside.

What do you need?

  • 300 gr (10,5 oz)  self-rising flour (300gr(10,5 oz) flour with 2,5 teaspoons baking powder)
  • 200 gr (7 oz) unsalted butter (room temperature)
  • 160 gr (5,6 oz) sugar
  • 16 gr (0,56 oz) vanilla sugar
  • 5 eggs (room temperature)
  • 3 tablespoons of milk
  • Pinch of salt
  • 3 – 4 sweet apples
  • Powdered sugar (optional)

How to make it?

Preheat the oven to 170 °C or 340°F (150 °C or 300 °F hot air).

Take a springform baking tin and line the bottom with baking paper and grease the sides of your baking tin with butter or baking spray.

In a bowl add butter together with sugar and vanilla sugar. Mix for about 3 minutes until creamy.

Add the eggs one by one. Do not add the next egg until the previous has been completely recorded.

Now add the self-rising flour and salt, do this is two steps, not all at once, when the flour is add you can add the spoons of  milk.

Do not mix too long, stop once the flour has been mixed into the batter.

Stir well with a spatula, make sure you go along the edges of the bowl so you have all remaining flour and butter and stir it into the batter.

Pour the batter into the spring form and spread evenly.

Peel and quarter the apples. Remove the core and now cut thin notches along the top. Note, do not cut all the way through. The apple remains whole at the bottom. The notches open nicely during baking.

Put the apples on top of the batter, leave a little space between them. Press them a little bit into the batter.

Place the cake in the oven and bake for 1 hour. Remove the cake from the oven, let it cool in the baking form for 10 minutes before loosening the form and allowing the cake to cool further on a cooling rack.

Before serving, you can sprinkle a little icing sugar on the cake.
