Carrot-Apple Soup With Mozzarella

A bowl of soup always tastes good. This soup is a combination of vegetables and fruits. The apple gives the soup a nice sweet taste, but it is not overpowering.

I used mozzarella as a finish because it makes the soup a bit more creamy and I personally like this very much.

What do you need?

  • 1 onion, chopped
  • 1 kg (35 oz) of carrots, cut into pieces
  • 2 apples, peeled and cut in pieces
  • 1.5 l (53 oz) chicken stock
  • Pepper and salt
  • Grated mozzarella

How to make it?

In a large cooking pot, fry the onion in a little oil for about 2 minutes on medium heat.

Now add the carrots and apple pieces. Let it bake for a short while.

Add the chicken stock and cook for 20-30 minutes, until the carrots are tender.

Mix the soup fine, if the soup is too thick, add some more water.

Season with salt and pepper.

Divide between bowls and sprinkle mozzarella on top of each bowl.
