Royal Icing
Royal icing is for decorate cookies. It’s very nice to work with, It has a nice firm form and it dries easily. You can easily add food coloring to give it a nice color.
What do you need?
- 400 gr (14 oz) icing sugar
- 60ml (2 oz) of water
- 10 gr (0,35 ozz) egg white powder
How to make it?
Combine all ingredients in a bowl and mix well until you create a firm mass.
With this recipe you can make icing that is perfect for decorating your cookies. This is the strongest form, this is the one you start with start. Use a very fine nozzle for this.

To fill the lines, you can put some icing in a bowl and add a few drops of water. Don’t put too much water at once, icing will quickly become very runny.
TIP: you can also make this with fresh egg whites, but I would not recommend this because of salmonella. You can obtain this egg white powder at baking stores.
TIP: if you don’t have any nozzles, you can always decorate your cookies with this sturdy icing by using a knife. It does give a slightly less attractive effect, but if you decorate the cookies with sprinkles, you don’t see it.
