Bruschetta With Ricotta And Peach

A delicious fresh and easy to prepare appetizer, ideal for the holidays if you have prepared a whole meal after this or as a fresh appetizer that’s not to heavy with all your other appetizers.

What do you need?

  • 1 large bake-off bread
  • 250 gr (8,8 oz) ricotta
  • 3 half peaches, cut
  • 50 gr (1,7 oz) pancetta
  • Balsamic vinegar
  • A few leaves of fresh basil, cut

How to make it?

Preheat the oven to 200 °C or 390°F  (180 °C or 360°F hot air). Take 1 oven tray and cover it with baking paper.

Cut the pancetta into pieces and fry them until they are crispy and brown. Set aside to use later.

Cut the bake-off bread into pieces before baking. Place these pieces flat on the baking tray and bake for 10 minutes until nicely browned.

Let the pieces of bread cool down.

Spread ricotta on each piece of bread, then put a peach slice on top.

Place a few pieces of pancetta on top of the peach and sprinkle cut basil on top.

Drip a little bit of balsamic vinegar on the whole.
