Apple Puff Pastries
A delicious apple pastry made with apple mousse, fresh apple and puff pastry. I love nothing more than baking in the morning when everyone is still asleep so we can all eat a delicious piece of pastries with a nice cup of coffee in the morning.
What do you need?
- 1 roll of puff pastry (elongated)
- 4 apples
- 200 gr (7 OZ) homemade apple mousse (or from a jar)
- 1 egg, beaten
- 2 tablespoons of apricot jam
- Powdered sugar
How to make it?
Preheat the oven to 200 °C or 390°F (180 °C or 360°F hot air). Take an oven tray and cover it with baking paper.
Roll out the puff pastry and cut 8 rectangles out of it. Place the rectangles on the baking tray. I had to use two baking trays for this.
Brush the edges with egg (see at the photo). Spoon 1 tablespoon of apple mousse onto each rectangle in the center.
Cut the outer sides of each apple off, leaving a disk in the middle with the core in it. You can throw this away. You remove the peel from the two outer sides.
Cut the apple into long strips but hold them together. Place these half apples in the middle on top of the apple mousse. (look at the picture)
Tuck the corners towards the center and brush with the remaining egg.
Bake the pastries in the oven for 25 minutes.
Let them cool on a wire rack for 20 minutes.
Heat the apricot jam in the microwave for 20 seconds, so that it is less firm.

Cover each pastry with apricot jam on the top. This gives it a wonderfully sweet taste and makes your pastry shine beautifully.
Sprinkle a little icing sugar over the pastries as well.
